Ingredients

Scale
  • 1 head garlic
  • Extra-virgin olive oil
  • Coarse sea salt and freshly ground black pepper
  • 1½ cups water (room temperature)
  • 1 teaspoon active dry yeast
  • 3 cups bread or all-purpose flour
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher or fine sea salt
  • 2 teaspoons finely chopped rosemary (plus more for topping)

Instructions

  1. Roast the garlic by slicing the head in half, drizzling with olive oil, seasoning with salt and pepper, wrapping in foil, and baking at 400°F for about 40 minutes. Allow to cool before removing the cloves from their skins.
  2. In a bowl, combine room temperature water and yeast; let sit for 10–15 minutes. In another bowl, mix flour, oregano, salt, and rosemary.
  3. Combine yeast mixture with flour mixture, roasted garlic, and olive oil using a rubber spatula until just mixed. The dough should be sticky.
  4. Cover and let rise in a warm place until doubled (8–10 hours).
  5. After rising, shape the dough gently into a ball on a floured surface and refrigerate overnight or up to 48 hours.
  6. Preheat oven to 450°F with a Dutch oven inside.
  7. Remove dough from fridge, place on parchment paper seam side down, score the top with a knife, then transfer into the hot Dutch oven.
  8. Bake covered for 30 minutes; uncover and bake for an additional 15 minutes until golden brown.
  9. Cool on a wire rack before slicing.
