Pat chicken dry and season both sides with salt and pepper.
Heat 1 tablespoon oil in a large pot or Dutch oven over medium heat. Sear chicken for about 2–3 minutes per side until lightly golden. Transfer to a plate to rest.
In the same pot, add diced onion and cook for about 3–4 minutes until translucent. Then add garlic and jalapeño; cook for another minute until fragrant.
Stir in green chiles along with cumin, oregano, coriander, smoked paprika, white pepper, and cayenne. Sauté these spices for about one minute.
Return the seared chicken to the pot. Then add beans, corn, and chicken broth. Bring everything to a gentle simmer.
Cover the pot and let it cook for about 15–20 minutes or until the chicken is cooked through and tender.
Remove the chicken from the pot and shred using two forks before returning it back into the chili.
Stir in sour cream and shredded cheese until fully melted. Adjust seasoning as needed.
Ladle into bowls while hot and top with chopped cilantro along with additional sour cream or cheese as desired.
