Ingredients

Pasta
  • 12 oz penne pasta or any pasta of choice
Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
Cajun Seasoning
  • 2 tbsp Cajun seasoning
Cream Sauce
  • 1 cup heavy cream
  • 1 cup chicken broth low sodium recommended
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 medium onion diced
  • 1 cup bell pepper diced
Garnish
  • 2 tbsp fresh parsley chopped

Method

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare Chicken
  1. In a skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 3-4 minutes.
  2. Add the chicken pieces and Cajun seasoning to the skillet. Cook until the chicken is browned and cooked through, about 6-8 minutes.
Make Cream Sauce
  1. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and let it thicken for about 5 minutes.
  3. Add the grated Parmesan cheese and stir until melted and smooth.
Combine and Serve
  1. Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. Cook for another 2-3 minutes to heat through.
  2. Garnish with fresh parsley before serving.
