Preheat your oven to 375 degrees Fahrenheit. Line a sheet pan with parchment paper. Place the bacon strips on the prepared pan and drizzle them generously with maple syrup. Sprinkle smoked paprika and cayenne over the top before placing them in the oven for about 30 minutes.
In a large pot, combine organic Better than Bouillon Roasted Chicken Base with water. Add in your diced onions and garlic cloves first. Next, toss in diced potatoes and apples. Cook everything on medium heat for about 20–30 minutes until the potatoes are fork-tender.
Once everything is soft, take out your hand immersion blender and puree the mixture until smooth. Stir in maple syrup along with shredded gouda and cheddar cheese. Add salt, pepper, smoked paprika, and cayenne. Reduce heat to low to gently melt the cheese.
When your candied bacon is perfectly cooked, chop it into bite-sized pieces and stir it into your soup just before serving.
Store leftovers in a sealed container in the fridge for up to one week or freeze portions for up to one month.
