Ingredients

  • 4 cups all-purpose flour plus extra as needed
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1.75 cups buttermilk

Method

  1. Preheat your oven to 425°F. In a large mixing bowl, combine the flour, baking soda, and salt. Stir together until well mixed.
  2. Add the chopped fresh herbs along with the shredded cheddar cheese into the dry mixture. Then pour in the buttermilk and stir until everything is just combined.
  3. Turn the dough out onto a lightly floured counter. Bring it together gently and knead it just enough to form a smooth ball.
  4. Shape the dough into a ball and pat it down into a circle about 7 inches wide. Lightly flour a baking sheet and transfer your dough onto it. Dust the top with more flour and score a cross into the top about half an inch deep.
  5. Bake your Cheddar and Herb Soda Bread in preheated oven for about 15 minutes before reducing the heat to 375°F. Continue baking for another 30 to 35 minutes until golden brown.
  6. Once baked, wrap your soda bread in a tea towel while cooling to keep the crust soft.
