  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)
  • 2 tbsp melted butter (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In a large bowl, mix melted butter with granulated sugar and brown sugar until combined. Add eggs and beat well. Stir in apple cider and vanilla extract.
  4. Gradually add dry ingredients to wet mixture and stir until just combined; avoid overmixing.
  5. Pour batter into the prepared loaf pan and bake for about 45–50 minutes or until a toothpick comes out clean.
