Ingredients

Scale
  • 1 cup butter (room temperature)
  • 2 cups sugar
  • 2 tablespoons lemon zest
  • 2 large eggs (room temperature)
  • 3 cups all-purpose flour
  • 1 cup lemon juice
  • 3 egg yolks
  • 1 cup sugar (for curd)
  • 1½ tablespoon corn starch
  • 1/4 cup butter (cold and cubed)
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla extract

Instructions

  1. To make the lemon curd, combine lemon juice, egg yolks, sugar, corn starch, and lemon zest in a saucepan over medium heat. Stir continuously until thickened. Remove from heat and stir in cold cubed butter until melted. Let cool.
  2. Preheat oven to 350°F (175°C). Cream together room temperature butter and sugar until fluffy. Mix in lemon zest, eggs, and vanilla extract.
  3. In another bowl, whisk together flour, salt, baking powder, and baking soda. Gradually add dry ingredients to wet mixture until combined.
  4. Scoop tablespoon-sized portions of dough onto lined baking sheets, creating an indent with your thumb for the curd. Bake for about 10 minutes or until lightly golden.
  5. Once cooled slightly, fill each thumbprint with prepared lemon curd.
