Ingredients

Scale
  • 2 medium zucchini, sliced (about 2 pounds)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can (28 ounces) diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice zucchini into rounds and sprinkle with salt. Let sit in a colander for 15 minutes to draw out moisture. Rinse and pat dry.
  3. In a skillet over medium-high heat, heat olive oil. Cook diced onion until softened (about 2 minutes), then add minced garlic and ground beef. Cook until browned (about 5 minutes). Stir in drained tomatoes, Italian seasoning, salt, and pepper.
  4. In an 8×8 baking dish, layer half of the meat mixture at the bottom followed by half of the zucchini slices and half of the cheese. Repeat with remaining ingredients.
  5. Bake in the preheated oven for 20 to 25 minutes or until cheese is melted and lightly browned. Let rest for about 10 minutes before serving.
