  • Fresh mint leaves and cilantro
  • 2 tbsp fresh mint leaves
  • 1/2 tsp ginger garlic paste
  • 1/4 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1 tsp red chili powder
  • Salt, to taste
  • 8 cups water
  • 1 tbsp oil
  • 2 tbsp salt
  • 2 cloves
  • 1/4 cinnamon stick
  • 2 cardamom pods
  • 1/2 bay leaf
  • 1 tbsp ginger garlic paste
  • 6 cashews
  • 1/2 tsp cumin seeds
  • 1/4 cup water (if needed)
  • 1 tsp garam masala powder
  • 1/4 cup fresh mint leaves and/or cilantro, chopped
  • 1/3 cup crispy fried onions

Instructions

  1. Marinate the chicken pieces with ginger garlic paste, turmeric powder, coriander powder, red chili powder, and salt. Let it sit for at least 30 minutes.
  2. Rinse basmati rice under cold water and soak for about 30 minutes before draining.
  3. In a heavy-bottomed pot, heat oil and sauté chopped onions until golden brown. Add the marinated chicken along with cashews and cook until browned.
  4. Stir in chopped tomatoes and cook until softened. Then add ginger garlic paste, cumin seeds, spices, yogurt, kasuri methi, and salt.
  5. Layer soaked basmati rice on top of the chicken mixture and pour in water carefully.
  6. Cover and cook on low heat for about 20-25 minutes or until the rice is fully cooked without lifting the lid.
  7. Fluff the biryani gently with a fork before garnishing with crispy fried onions and fresh herbs.
