Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • 2 large eggs
  • ½ cup milk
  • 6 oz dark chocolate
  • 6 oz white chocolate
  • 2 cups heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a bowl, mix flour, sugar, cocoa powder, baking soda, and baking powder. Add eggs, milk, melted butter, boiling water, and vanilla; mix until smooth.
  3. Pour batter into pans and bake for about 30 minutes or until a toothpick comes out clean. Cool completely before removing from pans.
  4. For the dark chocolate mousse: Bloom gelatin in cold water; melt dark chocolate and mix with gelatin. Whip cream and fold into cooled chocolate mixture.
  5. Spread half the mousse on one layer of cake; top with the second layer and spread remaining mousse on top. Refrigerate.
  6. For the white chocolate mousse: Repeat steps using white chocolate. Spread over dark mousse layer.
  7. Make ganache by heating cream and pouring over chopped semi-sweet chocolate; stir until smooth.
  8. Pour ganache over assembled cake and chill for at least two hours before serving.
