Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • ¾ cup hot water
  • 4 tablespoons vegetable oil (divided)
  • 1 teaspoon salt
  • 1 ½ cups finely chopped scallions (green parts only)
  • Sesame oil for brushing

Instructions

  1. In a mixing bowl, combine flour and gradually add hot water while stirring until a shaggy dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.
  2. Divide the dough into four equal portions. Roll each piece into a thin rectangle.
  3. Brush with sesame oil, then sprinkle salt and scallions evenly over the surface.
  4. Roll the rectangle tightly like a jelly roll and coil it into a spiral shape. Flatten gently.
  5. Roll the coil into a pancake about ¼-inch thick.
  6. Heat 1 tablespoon of vegetable oil in a skillet over medium heat and fry each pancake for 2–3 minutes per side until golden brown.
  7. Let cool slightly before cutting into wedges and serving warm.
