Ingredients

Scale
  • 4 whole corn cobs
  • 3 tbsp extra virgin olive oil
  • 1 1/2 tsp garlic powder
  • 2 1/2 tsp smoked paprika
  • 2 tsp kosher salt
  • 2 tsp black pepper
  • 50g unsalted butter
  • 1 garlic clove (finely minced)
  • Optional: chopped parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut each corn cob in half lengthwise, then slice each half into quarters to create rib-like shapes.
  3. In a mixing bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper. Toss the corn ribs in this mixture until well coated.
  4. Arrange the seasoned corn ribs on a baking sheet in a single layer and bake for 20-25 minutes or until tender and slightly charred.
  5. While the corn cooks, melt the unsalted butter in a small saucepan over low heat, adding minced garlic and simmering until fragrant.
  6. Remove the corn from the oven and drizzle with garlic butter before garnishing with herbs if desired.
