Ingredients

Scale
  • 340 g all-purpose flour
  • 230 g unsalted butter (cold & cubed)
  • 140 g ice cold water
  • 4 tart apples (about 700g after peeling and slicing)
  • 300 g red cherries (pitted & halved)
  • 50 g brown sugar
  • 20 g cornstarch
  • 1 tablespoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 egg (beaten) for topping
  • Sugar crystals for sprinkling

Instructions

  1. Prepare the crust by mixing flour and salt in a bowl. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Refrigerate for at least 30 minutes.
  2. For the filling, toss sliced apples with brown sugar, cornstarch, cinnamon, vanilla extract, and halved cherries.
  3. Preheat the oven to 375°F (190°C). Roll out half of the chilled dough into a circle and fit it into a pie dish.
  4. Fill with the cherry apple mixture evenly.
  5. Roll out the second dough half and cover the filling, cutting slits for steam to escape. Trim and crimp edges to seal.
  6. Brush with beaten egg and sprinkle with sugar before baking for about 70 minutes until golden brown.
  7. Allow cooling for at least an hour before serving.
